The Food Authority is comprised of a Scientific Committee and 21 Scientific Panels, which serve as its primary scientific arms in the process of developing standards. More than two hundred scientific specialists from a variety of scientific organizations, including the Indian Council for Medical Research (ICMR), the Council for Scientific and Industrial Research (CSIR), the Indian Council for Technical Education and Management (NIFTEM), and several institutes that work in the field of food safety and nutrition have been recruited by the authority. These panels are constantly involved in the process of defining standards for a wide variety of categories, including but not limited to cereals, milk and milk products, fruits, vegetables, spices, oils and fats, water, fish and fisheries, meat and meat products, sweets, genetically modified organisms and food, food additives, and so on.

Whether it be in the inspection of food manufacturing facilities, distribution facilities, or retail facilities, as well as subsequent laboratory testing as stipulated by the Food Safety and Standards Act (FSS Act), the Food Safety and Standards Authority of India (FSSAI) plays a crucial role in ensuring the quality of food along the whole food value chain. A framework has already been established by the government, which includes food safety commissioners who are in charge at the state level, designated officers who are in charge at the sub-divisional level, and over 4,000 food safety officers who are keeping a vigilant watch against the adulteration and contamination of food. 246 food laboratories in the country have been notified by the Food Safety and Standards Authority of India (FSSAI). These food laboratories have highly qualified professionals and state-of-the-art infrastructure, which allows them to provide superior quality control of food that is manufactured, distributed, or provided to the market.

Officials from the Food Safety Departments are responsible for conducting surveillance, monitoring, inspection, and random sampling of food products to carry out enforcement. This is done to ensure compliance with the regulations. To assist field officers in recording their observations and capturing real-time data during inspections, the FSSAI has digital tools for inspection and sampling in place. These tools are known as FoSCoRIS. These tools allow field officers to upload records, take pictures, and record their observations. After the sample details have been captured, they are sent to the laboratories through the InFoLNet portal of the FSSAI so that lab test reports can be uploaded. The results of these laboratory tests are subsequently made digitally accessible to all of the relevant authorities in the relevant jurisdictions. When it comes to carrying out enforcement activities, the authorities can take a more sensible approach thanks to the historical data regarding food business facilities.

An application called Food Safety Connect has been developed with the purpose of connecting customers with the Authority. This application is accessible to consumers from any location in the country, allowing them to lodge their complaints regarding food safety and receive a response that is both timely and satisfactory.

Providing food safety authorities, food handlers, and food business operators (FBOs) with the tools they need to implement food safety and quality through training has been a focus area for the Food Safety and Standards Authority of India (FSSAI). Since 2017, the FSSAI has taught more than 1.5 million food handlers and FBOs. Within the next three years, the Food Safety and Standards Authority of India (FSSAI) intends to expand its training program to include 2.5 million food handlers and food business operators.

The Food Safety and Standards (Safe Food and Balanced Diets for Children in School) Regulations, 2020 have been notified by the Food Safety and Standards Authority of India (FSSAI) to improve the nutritional status of children. With effect from the first of July in 2021, it places restrictions on the availability of foods that are high in saturated fat or trans fat, as well as added sugar or sodium, on school campuses or within fifty meters of schools. This legislation makes it illegal to advertise or market food products that are high in saturated fats or trans fats, as well as added sugar or sodium, on school campuses or within a fifty-meter radius of those campuses. In addition to this, the FSSAI encourages the consumption of a wide range of foods to provide nutritious nourishment, taking into account the huge variances in diet, culture, and customs. A range of whole grains, including wheat and rice, which are commonly consumed, as well as millet and other indigenous grains, are encouraged to be consumed by citizens to improve their nutritional intake. Citizens are also encouraged to make healthy food choices and to promote diet diversification.
